In 2017 “Porcobrado” was crowned as the BEST SANDWICH IN EUROPE at the EuroSFA-2017 and EuroSFA-2022. A deserved title which paid back all the commitment and the passion we dedicated to this project.

PROCESSING
100 WORKING HOURS IN ORDER
TO ACHIEVE PERFECTION
The process which leads to the final product lasts more than 100 hours. We start with a light and fragrant smoking with apple and cherry wood, then we leave the meat to rest some days in our special spicy marinade.
The final cooking is done in our purpose-built Barbecue using only Cortona oak wood, this allows the meat to cook slowly at low temperature in its own melting fat.
This whole process takes place without using chemicals, such as preservatives and additives. The result is that our meat is 100% natural and genuine.

AND NOW THE SANDWICH!
Our bread is made of Verna wheat flour (an ancient soft wheat typical of Arezzo, with a low gluten content and ground by stone) and a 100% Tuscan flour blend, kneaded with sourdough.
Thanks to this ancient wheat flour and the slow leavening, our bread not only has an original fragrance but it is also highly digestible.
The sauces are made in our cooking workshop following exclusive recipes with local fresh raw materials and without using any preservatives.
