MAKE IT AT HOME

    Preheat the oven to 240°C/464°F. Dip the package of meat in a pot with cold water and put it on the fire

    Bake the bread 4 minutes before the water boils. Once boiling, remove the bag from the pot and the bread from the oven. Let both rest 1 minute

    Stuff the sandwiches with the meat contained in the package, adding the sauces as desired. Enjoy your meal! 😋

THE HISTORY OF A PORCOBRADO

Since 2016 we have entered the world of street food with a unique product made of our meat which lead us to success both in Italy and abroad.


Our Porcobrado sandwich, obtained through a method of smoking, marination and low-temperature long-time cooking of our pork, after the great successes in Italy, was crowned the best European sandwich in 2017 and 2022

BREEDING

The meet is produced exclusively in our farm located in Cortona on the most beautiful hills in Tuscany. We raise pigs of “Cinta Senese” and “Grigio della Valdichiana” breed. They are free to breathe clean air, sleep under the stars, run, roll in the mud, and snuffle all day.


In addition to grazing, our pigs feed on local products, especially barley and tick beans (we do not use corn and soy as in intensive farming). The meat derived from it is of the highest quality as our pigs grow very slowly following natural rhythms and the fat they accumulate is rich in unsaturated fatty acids, therefore it is better and healthier.

MEAT PROCESSING

The process that leads to the finished product takes several days and starts with a light and fragrant smoking with apple and cherry wood. Then we leave the meat a few days in our spicy marinade.

The final cooking is done in our purpose-built Barbecue using only Cortona oak wood, which allows the meat to cook slowly at low temperature in its own melting fat.
